Salcombe Gin Cocktail Recipe: The Schooner Collins

Evoking endless sunny Salcombe days by the water watching the boats glide by, The Schooner Collins cocktail perfectly combines citrus and spice with Salcombe Gin ‘Start Point’.  So sit back with your cocktail in hand and start dreaming of your next Salcombe adventure.

35ml Salcombe Gin ‘Start Point’
30ml lemon juice
15ml cinnamon syrup*
2 drops cardamom bitters
Fever-Tree soda top up
Twist of lemon peel
Lots of ice

METHOD

Fill a Boston shaker with ice and the gin, lemon juice, cinnamon syrup and 2 drops of cardamom bitters.
Shake vigorously for 10 seconds.
Strain over cubed ice into a high-ball glass.
Top up with soda water.
Stir gently and garnish with a twist of lemon peel inside the glass.

*To make a cinnamon syrup simply combine 1 cup of white sugar with 1 cup of cold water and 2 -3 sticks of cinnamon in a saucepan and bring to the boil.
Stir gently until the sugar is dissolved and allow to simmer for about 5 minutes on a very low heat.
Leave to cool and strain into a glass container.
